The sophisticated ventilation system with pneumatic air flaps directs the air alternating from left to right and right to left over the mesh trays or over the closed tray system, containing the products. Due to the horizontal airflow between the separate layers an absolutely uniform temperature distribution and colouring of the product within the entire chamber is achieved.
