Brine pickling is the most important method for improving the quality of ham products, whereat in addition to the conservation also the taste experience plays a major role. Demanded are tender, juicy and particularly tasteful ham specialities, which can be quickly and easily produced thanks to the emulsion technology from Inject Star.

The requirments on machines for the injection of fish and fresh meat increase steadily. Expected is not only the fulfilment of highest hygienic standards during the production process but also the technological adaption to product specific details. This is due to the different and sensitive structure of fish and fresh meat compared to other products. Therefore a particularly gentle treatment is required.
